The Perfect Chicken Adobo Recipe
If you’re a fan of Filipino cuisine, then you’ve probably heard of the classic dish, Chicken Adobo. In this recipe, we’ll show you how to make the perfect Chicken Adobo using chopped chicken leg quarters and a few other key ingredients.
Marinating the Chicken
Start by taking 1.4 kilos of chopped chicken leg quarters and marinating them in a mixture of 2 tablespoons of soy sauce, 3 tablespoons of oyster sauce, 1/2 cup of banana ketchup, and ground black pepper. Add 1 and 1/2 cups of Coca-Cola to the mixture, and marinate the chicken overnight or for at least 1 hour to allow the flavors to infuse.
Preparing the Sauce
Once the chicken has marinated, sauté 2 chopped onions on high flame for about 20 seconds. Then add 8 cloves of chopped garlic and continue to sauté for another 10 seconds. Add the marinated chicken to the pan (without including the marinade) and continue to sauté on high flame. Season with salt and black pepper, and then add the leftover marinade to the pan.
Cooking the Chicken
Continue to cook the chicken on high flame, allowing the marinade to reduce for about 8 minutes. Once the sauce has reduced, separate the meat from the sauce and leave a bit of it in the pan. Add 20g of butter to the pan and melt it before pan-frying the meat on medium flame. The pan frying concentrates the flavors and locks them inside the meat, making for a more flavorful dish.
Finalizing the Dish
After pan frying, add the remaining sauce back to the pan and mix it to further enhance the flavors. You can choose to serve the dish with a bit more sauce or continue to reduce it for a more concentrated flavor. Once the sauce reaches your desired consistency, the Chicken Adobo is ready to be served.
